“Tres Puercos”

This was just too good to keep to myself. Here’s the recipe - have fun.

  • 2 lbs dried navy beans
  • 4 ham shanks
  • 1 lb smoked bacon
  • 1 lb bulk italian sausage
  • 2 large white onions
  • 2 red bell peppers
  • 6 cloves garlic
  • 4 celery stalks
  • 3 carrots
  • 4 cups chicken stock
  • 1 cup white wine
  • 2 tbls balsamic vinegar
  • 1 cup seasoned bread crumbs
  • 1/2 cup shredded parmesan cheese
  • Salt & Pepper
  1. Soak beans overnight
  2. Make soup
  3. Ladle soup into baking dish, top with crumbs/cheese
  4. Broil until topping just browned
