“Tres Puercos”

- 2 lbs dried navy beans
- 4 ham shanks
- 1 lb smoked bacon
- 1 lb bulk italian sausage
- 2 large white onions
- 2 red bell peppers
- 6 cloves garlic
- 4 celery stalks
- 3 carrots
- 4 cups chicken stock
- 1 cup white wine
- 2 tbls balsamic vinegar
- 1 cup seasoned bread crumbs
- 1/2 cup shredded parmesan cheese
- Salt & Pepper
- Soak beans overnight
- Make soup
- Ladle soup into baking dish, top with crumbs/cheese
- Broil until topping just browned
